Two Ingredient Healthy Cookies

If you are in the mood for something healthy and slightly sweet, these are the perfect treat! I rarely bake... mostly because I'm not that great at it but also because I don't keep very many ingredients in the house that are required for baking - like flour and sugar for instance. So, when I'm in the mood for something sweet I find myself digging through healthy recipes that require very few ingredients and are relatively healthy. This recipe could not be more simple and it's likely that - like me - you always have both of the main ingredients lying around. And get this... these treats are healthy!! My daughter and I introduced this recipe in a Facebook Live video about a month ago and the response inspired me to deliver the super simple recipe as my first blog post. Enjoy!


2 Ripe Bananas ~ 1 cup
1 cup Old Fashioned Oats... yep, that's it!
Other Optional Add ins:
1/2 tsp vanilla extract

1 tsp cinnamon
1/2 cup raisins
1/4 cup shredded coconut - unsweet


Pre-heat oven to 350.
Mash bananas and stir in oats along with any of the optional ingredients. Mixture will be wet - more like batter than dough.
Line a baking sheet with parchment or grease lightly with coconut oil.
Form mixture into 1-2inch balls and place on baking sheet with a few inches of space between. Cookies will retain shape and have a dense, bran-muffin like firmness when cooked. 
Bake for 15-20 minutes or until firm
